My Favorite Recipe

I thought I would share one of my favorite recipes. It is called Smothered Home-Style Chicken and I first got it out of a Taste of Home Quick Cooking magazine, and it is now in the Taste of Home 2011 Quick Cooking Annual Recipes. This recipe takes about 30 minutes start to finish. The ingredients you will need are:

1/3 cup all-purpose flour
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon Cajun seasoning
1 teaspoon pepper
5 boneless skinless chicken thighs (about 1-1/2 pounds) *I use breasts to make it healthier
3 tablespoons olive oil, divided
2 medium carrots, chopped
1 small onion, chopped
½ cup chopped green pepper
2 garlic cloves, minced
½ c white wine or chicken broth *I used chicken broth
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
½ cup chicken broth
Hot cooked rice

In a large resealable plastic bag, combine the flour, salt, garlic powder, Cajun seasoning and pepper. Add chicken, one at a time, and shake to coat. In a large skillet brown chicken in 2 tablespoons oil in batches. Remove and keep warm. In the same skillet, sauté carrots, onion, and green pepper in remaining oil until tender. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Stir in soup and broth. Return chicken to skillet. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until chicken juices run clear. Serve with rice. Yield: 5 servings.

I made this meal for my mom and sister and we all loved it, it definitely tastes like a home-style meal. I have also made it for my husband, and he told me “you can make this again” which is his way of saying he likes it. I hope you enjoy this recipe as much as my family and I have.

Welcome

I am starting this blog to help people of all ages in the kitchen. I have been cooking for a very long time and enjoy it very much. I have taken many different types of food to county fairs and always do well. When I was in high school I was a very active member of our local 4-H club, the area I strived in in 4-H was the cooking division. I would take about 5-10 different cooking projects each year. I ALWAYS got a blue ribbon and recieved many best of class and best of show ribbons. I was also able to take a few of my projects (quick bread and candy) to the Illinois State Fair and recieved Superior ribbions for both of those. I would love to share some cooking tips, great cook books, online sources for cooking and anything you would like to know about cooking. If I can't answer your questions I will do some research and find out what others think. I am from a family that loves cooking and loves food, and will always try something at least once, and if it doesn't turn out, I usually try again. I haven't come across any food group or course that I don't enjoy making. So I would love for people to share their favorite recipes and any tips you may have. I love receiving and trying new foods and will report back what I thought about recipes I receive. Hope you enjoy my blog and find it helpful!
